鹼麵 Alkaline Noodles

材料 Ingredients
中筋麵粉 All purpose flour 4 杯 cup
鹼水 Potassium carbonate & sodium bi-carbonate solution 1 大匙 Tbs
滾水 Boiling water 2 大匙 Tbs
水 water1 杯 cup
鹽 Salt 1 小匙 tsp

做法
1.將所有材料放進攪拌缸用筷子攪拌後用手揉成團,含有粗粒沒有關係。
2.轉移麵團到工作檯,分成6等小塊後揉成球狀再用手壓平。蓋上保潔膜醒30分鐘。
3.製麵機刻度設在1,將麵團用製麵機壓成長片。對折後再壓一次,重複此動作大約5次直到麵片光滑。機器刻度轉成4後再壓一次。重複此步驟將剩餘麵團做完。
4.用製麵機切麵功能將麵皮切成麵條。



PROCEDURE
1.Place all the ingredients in a mixing bowl and mix with a pair of chopsticks. Roughly knead the dough to form a shaggy ball.
2.Divide the dough into equal 6 pieces. Roll each piece to ball then press it into a flat disk. Cover with a piece of plastic wrap. Let the dough rest for 30 minutes.
3.Feed one piece of dough through the pasta maker, set to #1. Fold the dough in half then feed it through the pasta maker again. Repeat this process around 5 times until the dough is smooth. Repeat this step for the rest of the dough.
4.Using the pasta maker to cut the dough into thin noodles.
